Get some onions and all the vegetables you like stick them in a pot with a liter of stock and a can of tomatoes and boil until they are soft then blend.
Carry it around in the termos and some brown bread for dipping – if desired.

I make a batch of wholemeal pikelets and have different toppings depending what mood I’m in – ie honey or peanut butter or vegemite etc

if you don’t want have to make something you could just buy enough fruit to last a week and eat that.
But muffins are a good idea. I don’t think I’d recommend eating them everyday for one week even if they are healthy.
If you are going to do that, add whole grain to the match, and a nice antioxidant like blueberries
